Made from a Trinitario bean from the Bejofo Estate in the Sambirano Valley in the north west of Madagascar. These are fine Trinitario beans that have been certified organic.
These decadently dark drops have notes of summer fruits – sometimes its hard to believe that all the juicy berry flavour comes simply from the cacao itself.
Given its summer fruits flavour profile, this wonderfully dark chocolate works well in recipes that involve fruit.
I also think they make incredible melt in the mouth truffles, but you can also use the drops to add a rich depth of flavour to gravies, stews and casseroles.
