This Natural Cocoa Powder has soft, honeyed fruit notes, that come naturally from this fine Medellin cacao. These beautiful Trinitario beans are perfect for cocoa powder because they have incredible purity and depth of flavour.
We make it from the bean with the same uncompromising commitment to quality as with our chocolate. In an artisan production process designed to maximise flavour, the beans get a light roast, and then we conche for up to 21 days until the flavour is perfect and all the acidity removed. Finally we press out the butter using early 20th century cocoa butter presses, and mill it into a fine powder.
