Whisky and chocolate are one of the great pairings.
I have used an absolute classic whisky to make these truffles.
It's 12 Years Old and aged in sherry oak casks, which gives it depth and smoothness with notes of spice and dried fruits.
Captured perfectly in the caramel, it is paired with the honeyed San Agustin 70 dark chocolate.

These beautiful Trinitario beans come from the ancient San Agustin district in the foothills of the Colombian Massifs.
Farming methods are traditional, and no chemicals are used.
What I find fascinating is that when you add different amounts of sugar to it, it reveals different flavour notes.
