As this Venezuelan dark chocolate melts, it takes you on an adventure in taste to the place where the cacao was born, in this case Hacienda Las Trincheras with its magical ruined columns.
It took only one taste of this beautiful Trinitario bean for me to succumb to its rich, nutty, smoothness.
Artisan chocolate, craft made from bean to bar, to capture the stunningly individual flavours of the world’s great cacaos.
This takes up to 21 days at low temperatures, compared to industrial chocolate which is made in a few hours.
The chocolate is 100% natural, containing simply cacao, raw cane sugar and natural cocoa butter – no vanilla or soya lecithin to hide the beautiful flavour notes of the beans.

Las Trincheras is made from beans which come from a very old hacienda in Carabobo in Venezuela.
They work with the Terra Viva Foundation, a non-governmental organisation that encourages sustainable development through environmental programmes.
All farming methods are traditional and no chemicals are used.
The beans are a fine Trinitario with smooth nutty notes.
I started making chocolate with this bean for all the people who are starting their journey in dark chocolate.
After we have given them a light roast and a long conche you are never left with any acidity.
You may find it easier to use my Chef’s Drops but if you don’t mind spending a moment breaking this into squares, you’ll make the most wonderful desserts and cakes with it.
Softly nutty it makes particularly delicous cakes.
