This truly delectable Madagascan dark chocolate takes you to the banks of the Sambirano river.
Tasting so astonishingly of summer fruits, it’s sometimes hard to believe that all the flavour comes from the cacao.

Artisan chocolate, craft made in small batches from bean to bar, to capture the mind-blowingly different flavours of the world’s great, single estate cacaos. This takes up to 21 days at low temperatures, compared to industrial chocolate which is made in a few hours.

The chocolate is 100% natural, containing simply cacao, raw cane sugar and natural cocoa butter - no vanilla or soya lecithin to hide the beautiful flavour notes of the beans.

This beautiful chocolate is made from a Trinitario bean from the Bejofo Estate in the Sambirano Valley in the north west of Madagascar.

Aromatic cacao has been grown here since 1920 and has established a world wide reputation.

These are fine Trinitario beans that have been certified organic.

I describe it's flavour notes as summer fruits - imagine you have a bowl of berries that you have given a quick squeese of lemon juice.

I use Sambirano 71 dark chocolate to make my sea salt caramel pearls because its juiciness cuts so perfectly through the sweetness of the caramel.

Think of it like that in your cooking. If you want to have a cake with a caramel sauce, this is the chocolate for you!
