I discovered the beautiful Trinitario beans for my San Agustin 70% dark chocolate in the ancient San Agustin District, in the foothills of the Colombian Massifs.

Go with them on a journey of flavour, their soft notes of cherries and damsons dancing through the depths. With 70% cacao, this is a delicious low sugar chocolate.

Artisan chocolate, craft made in small batches from bean to bar, to capture the mind-blowingly different flavours of the world’s great, single estate cacaos.

This takes up to 21 days at low temperatures, compared to industrial chocolate which is made in a few hours.

The chocolate is 100% natural, containing simply cacao, raw cane sugar and natural cocoa butter – no vanilla or soya lecithin to hide the beautiful flavour notes of the beans.

These beautiful Trinitario beans come from the ancient San Agustin district in the foothills of the Colombian Massifs.

Farming methods are traditional, and no chemicals are used.

What I find fascinating is that when you add different amounts of sugar to it, it reveals different flavour notes.

In the 70% you catch glimpses of red fruits but what strikes me more are the honey nutty notes.

You would probably find it easier to use the San Agustin Chef’s Drops in cooking, but if you don’t have any around, it will be just a minute’s extra work to break up this bar.
