I’m so excited to share my Rio Caribe 72 with studded with wild Amarena Cherries. I make a desert with Fabbri’s Amarena Cherries nestling in chocolate ganache, layered on Cloud Forest Cake. It is called Paradise Found and here it is in chocolate form, more than living up to its name!
I have created a Rum Raisin. Using the Rio Caribe 72 with rum soaked raisins. I have jars of fruits soaking in alcohols ready to be part dried to go into chocolate or simply poured over desserts. These raisins give spectacular bursts of rum in every chocolatey mouthful, taking me back to the tastes of the cloud forest.
