
CHOCOLATE MILKSHAKE
Prep Time: 5 mins Cooking Time: 0 Serves: 2I grew up on homemade milkshakes. We made them using milk from our two Saanen goats, Nina and Sophie. However, if you don’t have a ready supply of goat’s milk, you can use full-fat organic cow’s milk instead. You can experiment by adding a slice or two of banana, or a handful of raspberries or blackberries, or a few chunks of fresh pineapple? You can vary the amount of cacao and sugar according to your taste.

Method
- Put the cacao, sugar and half the milk in a saucepan and warm over a moderate heat until just starting to boil, stirring constantly to dissolve the sugar and cacao.
- Remove from the heat, stir in the remaining milk and leave to stand until cold. Chill in the refrigerator.
- Pour the chilled chocolate milk into a blender, add the ice cubes and blitz for about 1 minute, until thoroughly mixed.
- Pour into tall chilled glasses and serve with a straw.
