2-3 tbsp raw cane sugar
5 tbsp Kirsch
200g white chocolate, roughly chopped. Suggestion, El Blanco chocolate
1 tbsp cold water
2 egg whites
Pinch of salt
300 ml double cream
6 fresh mint or geranium leaves, to garnish
