A chocolate sorbet needs three ingredients, fine sugar & chocolate, & fresh, pure water. Willie sets out across Dartmoor to source water for the perfect sorbet.
WILLIE’S ULTIMATE HOT CHOCOLATE
Cacao has been consumed as a drink for thousands of years in Central America. This recipe is based on a typical Aztec beverage.
COOKING WITH CACAO IN SPAIN
Travelling in Spain, Willie selects tempting local produce, and cooks up a storm. Olives, beans, chorizo. walnuts… The best ingredients make the finest flavours!
CACAO, PEPPER & HARISSA MACKEREL
Willie fishes for mackerel on the mouth of the river Exe with a friend. They return to prepare Cacao, Roasted Pepper and Chilli Harissa to go with their catch on the jetty.

Willie picks sloes in a Somerset orchard and makes sloe berry chocolate vodka, a great after-dinner liqueur or dessert served with a biscuit or a slice of cake.

In Sierra Leone Willie is invited to cook for the chief. The meal is a little late because Willie has to improvise – there’s no whisk, and then there’s no barbecue.
